Blueberry Coconut Muffins

I already shared with you this week a quick and easy recipe to roast veggies ahead of time for a quick lunch.  Well, maybe we should jump back to breakfast?  I made these great muffins a couple of days ago so I would have something yummy to eat on my way out in the morning.  No time for cooking in the morning…though maybe I should whip up some overnight oats again?

I found this recipe on How Sweet It Is for “Loaded Blueberry Coconut Muffins.” I had just bought some local blueberries at my grocery store and knew the recipe would be perfect!  Remember the coconut butter I made?  Well, I still had some shredded unsweetened coconut in the pantry, so thought it would work well.  I did not however have coconut oil or coconut milk as the recipe calls for, so substituted canola oil and skim milk.  Seemed to work just fine…and still had a nice sweet taste.

I also had some Grape Nuts in the pantry and have been meaning to use them up before they got stale. I saw Ally’s recipe for Blueberry Crunch Muffins and decided to adapt her idea of adding granola to muffins.  Instead I added Grape Nuts.  Can’t say they made a huge difference in the texture but I figured a little added fiber wouldn’t hurt anybody :)

Now, unlike Jessica I did not add toasted coconut and coconut butter to the tops of the muffins before serving.  I thought about it.  Seriously thought about it.  But, hey, the whole point was to have something quick to eat before running out the door.  So, yep, left them plain and enjoyed every single bite :)   Just sorry the pictures aren’t quite as pretty…

And in honor of Jessica’s grandmother, I made a little muffin-loaf for my grandmother.  I thought I should thank her for the roasted chicken, homemade banana ice cream, hamburger, sauteed kale, potato salad, pimento cheese…need I go on?  I’ve been fed well lately.  And the muffins have only helped!  Thanks Ganny!

Buttery Coconut

I’ve really been enjoying coconut in my overnight oats.  When I saw one of my favorite bloggers Ashley take her coconut and make it into butter, I got so excited!  I seriously left her a comment with so much enthusiasm for her experiment that I probably scared some of the other readers :)   She said the end consistency was like icing..And what is better than icing?!  I grabbed my grandmother’s trusty blender, added shredded coconut, and Wah-Lah!  Coconut Butter.  It took less than 10 minutes to make and truly uses nothing other than coconut.  Check it out…And I’ll share my oatmeal and coconut butter creations with you soon!
