Today is only a half day at work! Yay! The lesson planning went well and we are getting eager for the children to arrive. I actually have CPR/First-Aid training tomorrow…and more general orientation on Sunday. But I am glad for the rest today.
On to food…

The local produces keeps a-coming! Seriously, this one box of veggies has lasted us a really long time!! With our busy schedules I’m quite glad we didn’t sign up for a box every week…I’m not sure I could keep up! I used some of the ingredients for a quick cold salad the other night. I had a box of couscous in the cupboard and was craving some carbs
I threw in some green onions, kohlrabi, cucumber, and feta (had a coupon!). Out came deliciousness…I had hoped it would last for lunch the next day. No such luck. The husband devoured it. I’m glad I don’t have an appetite like him…our budget wouldn’t keep up! But I’m glad he enjoyed it…and hope you do too!
Tip: Couscous cooks really quickly and is one of the easist starches, if not foods, to cook. Use broth instead of water to give the couscous more flavor.

Add olive oil, salt, and pepper for taste.
